1 medium butternut squash (great for the bones and wonderful to reduce stress)
1 cup coconut milk (improves digestion and absorption of other nutrients, vitamins, and minerals)
1 cup stock + a little extra to thin the soup (preferably home made- but if you don't have time no one is going to judge you around here ;)
1 sweet onion (anti viral, antibiotic, antimicrobial AND anti parasitic!)
2 tablespoons of coconut oil (lubricate those joints in fall and winter)
salt and pepper to taste
1/2 tsp nutmeg (very nourishing in colder seasons)
1/2 tsp garlic (great for immune health)
dash of thyme (becasue who doesn't need more thyme?!)
Peel your squash and scoop out the seeds for roasting separately.
Chop squash into small cubes and dice onion.
In a large stock pot, melt the coconut oil and add diced onion.
Saute 3 minutes until starting to soften and add squash.
Saute 5 more minutes until squash starts to brown.
Add coconut milk, stock, and spices and bring to simmer.
Simmer about 20 minutes until soft.
Allow it to cool then blend until smooth.
Serve & EAT!
